I started making this gluten free stuffing recipe after one of my sons became gluten sensitive. Since most gluten free bread contains too many refined carbohydrates, starches and gums, I found an alternative made with fruit and vegetables that offers a great tasting and healthful alternative.
Now, it’s a regular part of our holiday tradition; I hope your family will like this stuffing recipe as much as we do.
Gluten Free Stuffing Recipe (from Silverman’s Farm)
Ingredients
3 cups apples (fuji or pink lady®), cored and sliced. Keep the skin on! (see picture for slice size)
¼ cup diced celery
1 small shallot, chopped and sautéed in olive oil first
1 medium carrot, grated
⅓ cup raisins
1 ½ tablespoons parsley
½ teaspoon cinnamon
¼ teaspoon nutmeg
2 tablespoons sliced almonds
1 tablespoon lemon juice
½ teaspoon salt (or slightly less, depending on taste)
Instructions
In a large bowl, mix the sliced apples together with the veggies (shallot, celery, carrot).
Add remaining ingredients, and fold together gently and thoroughly.
Place in a porcelain baking bowl, cover with aluminum foil.
Bake at 400°F for 30 minutes.
Notes
You can prep this gluten free stuffing a few hours ahead of time, and leave it on the counter until you’re ready to bake it.
